St. Patrick's Day 2004 served up the first Irish omelettes I had ever tasted. A thin base of sliced potatoes formed the foundation of the omelette, shown in the middle of the table with a spatula. The breakfast included all the tea, coffee, scones, sausages, and Kellogg's bars you could eat. The morning breakfast was topped by spring sunshine in a friendly paddock housing 12 young horses.
